The Revolutionary Fish-Cleaning Robot That’s Changing the Culinary Game
Revolutionizing the Seafood Industry with Innovative Technology
At a recent TechCrunch event in Los Angeles, Shinkei Systems founder Saif Khawaja and Founders Fund partner Delian Asparouhov delved into a unique conversation centered around a rather unconventional question for a venture event: How can you tell if a fish is stressed?
This question is at the core of Shinkei’s business model. The company has developed Poseidon, a refrigerator-sized robot that fishermen can install on their boats. Poseidon utilizes computer vision to scan each fish, identify its species, locate the brain, and ultimately euthanize the fish by piercing the brain and severing the gills, ensuring a humane and stress-free death.
While this method may seem harsh, it is a significant improvement over traditional fishing practices that often result in slow and stressful deaths for fish. By utilizing a technique similar to ike jime, Shinkei aims to preserve the quality and flavor of the fish by instantly killing it and draining its blood, allowing for safe aging and enhancing the taste of dishes like sashimi.
Khawaja’s inspiration for Shinkei stemmed from his childhood fishing experiences in the Middle East and a thought-provoking essay titled “If Fish Could Scream,” which highlighted the invisible suffering of fish during the food production process.
However, Shinkei’s vision extends beyond fish euthanasia. The company has evolved into a vertically integrated fish harvester and processor, leveraging robotics and AI technologies to streamline the supply chain from boat to plate. Shinkei provides Poseidon machines to fishermen at no cost, offering premium prices for the fish in return. The catch is then processed at Shinkei’s facility in Tacoma, Washington, and sold under the consumer brand Seremoni.
One notable success story for Shinkei is its partnership with Erewhon, a popular grocery chain in Los Angeles. Erewhon offers Shinkei’s fish as Seremoni Grade Miso Black Cod, emphasizing sustainability and humane harvesting practices. This pilot program has garnered attention from top-tier restaurants and even led to Japan importing American-caught fish, a rare occurrence in the seafood market.
The key selling point for Shinkei is not just the ethical aspect of its operations but also the quality and shelf life of its products. By extending the shelf life of fish through innovative processing techniques, Shinkei aims to reduce spoilage and improve overall product quality.
The seafood industry faces challenges related to processing, with a significant portion of American-caught fish being sent overseas for processing before returning to the U.S. market. Shinkei’s approach of re-shoring the entire supply chain in Tacoma aligns with the industry’s shift towards localized processing and sustainable practices.
Founders Fund’s investment in Shinkei reflects its strategy of backing founders in unconventional industries. Asparouhov highlighted the fund’s focus on hardware and physical-world businesses, citing SpaceX as a prime example of a successful investment in this space.
While Shinkei’s multi-faceted approach presents challenges, its commitment to innovation and sustainability sets it apart in the seafood industry. By combining cutting-edge technology with ethical practices, Shinkei is not only transforming the way fish are harvested and processed but also paving the way for a more sustainable future in the seafood industry.
